Vegan Hot Chocolate 

The holidays are the perfect time to spend quality time with family and friends. After all of the hustle and bustle of shopping and traveling, there’s nothing more relaxing than kicking back with a delicious hot beverage. I’ve never been a coffee drinker, I’ve always preferred tea. But, when I’m in the mood for a warm sweet treat, one of my favorite hot drinks to make for my family is hot chocolate. As most of you know, I enjoy creating vegan alternatives of my favorite foods and I’ve recently found a delicious recipe for vegan hot chocolate that CJ loves! Check it out below: 

• 1 cup of unsweetened almond milk
• 1 1/2 Tbsp dairy-free semi-sweet chocolate (chips or bar/chopped)
• Sweetener of choice (I prefer 1 Tbsp raw sugar or 1/2 packet powdered stevia per mug)
• 1/8 tsp peppermint extract
• Coconut whipped cream

Instructions:

1. Add almond milk to a large mug and microwave for 1 minute
2. Once milk is warm, add cocoa powder, chocolate and sweetener and whisk to combine
3. Put back in microwave until you’ve reached your preferred temperature
4. Taste and adjust sweetness 
5. Add in peppermint extract 
6. Stir and top with coconut whipped cream
