As you all know, I LOVE a good salad!! I’ve been challenging myself to eat at least one salad per day. One of my favorites is a kale salad. Some of the benefits of kale include lowering cholesterol, providing antioxidants, vitamin K and Vitamin C. I’ve also been challenging myself to make my own salad dressings. Store bought dressings can be full of unwanted sugars and calories. I’ve been trying trying different recipes and this one is quick, easy and delicious!
